The Calabrese Grandma prepares Trofie al Radicchio


Trofie with radicchio prepared by a Grandma's grandson. ♥️

Preparation for 2 people.

  • 1 medium long radicchio
  • 1 tablespoon of oil
  • half a shallot, chopped

Wash the radicchio leaves, dry them and cut them into strips.

Pour the extra virgin olive oil and the thinly sliced onion into a pan, let it brown over medium heat and add the radicchio, salt and cover with a lid until cooked.

When the radicchio is cooked, pour half of it into the blender, add the robiola, and a ladle of hot water (that of the pasta is also fine).

Blend until you get a cream, and put it back in the pan where we left the whole radicchio.
