Calabrian Eggplant Meatballs

Hi everyone, I'm Nonna Anna and today I'm revealing the recipe for a Calabrian specialty par excellence, fried aubergine poplettes 🍆

I peeled 2 eggplants, cut into 4, boiled in salted water.
After Drain, squeeze and place in a container with 2 eggs, basil, mint, pecorino cheese, garlic 1, soaked and squeezed stale bread, salt.

I mixed everything, made the shapes and fried 😊😋😊😋😊😋
